1. Purpose:
The paneer sterilizer is designed for post-pack sterilization of paneer blocks that have already been sealed in pouches or containers. This step ensures microbiological safety, allowing the paneer to be stored and transported under ambient or chilled conditions for a longer duration.
2. Principle of Operation:
The sterilizer works on the principle of heat treatment — typically by immersing or exposing the packed paneer to hot water or steam for a specific duration at controlled temperatures. The treatment destroys pathogenic and spoilage microorganisms.
3. Process Description:
Loading:
Packed paneer pouches or containers are placed in sterilization trays or baskets.
Sterilization Cycle:
The sterilizer chamber is filled with hot water or steam (temperature generally between 85°C – 95°C).
The paneer packs are held for a predetermined time (15–30 minutes) depending on product type and pack thickness.
The system ensures uniform temperature distribution throughout the chamber.
Cooling:
After sterilization, the hot water is drained and chilled water is circulated to quickly bring down the product temperature, maintaining paneer texture and preventing overcooking.
Unloading:
Sterilized packs are removed and sent for storage or distribution.
